Warm Bean Dip

1 (8 ounce) package cream cheese, softened
1 cup sour cream
2 cans (16 ounces, each) refried beans
1 packet taco seasoning
2 cups cheddar cheese, shredded
2 cups montery jack cheese, shredded


DIRECTIONS: Preheat oven to 350 degrees. Mix together cream cheese and sour cream in a large bowl. Mix in refried beans until combined. Stir in taco seasoning.

Spray a 9x13 baking pan with cooking spray. Spread mixture in baking dish. Sprinkle the top with both cheeses.

Bake for 25-30 minutes, or until cheese in melted and slightly browned. Serve with tortilla chips.

Company Salad

1 Lg Pkg Jello - orange
1 lg Pkg Vanilla Pudding (not instant)
3 C Water
8 oz Cool Whip
2 Can Mandarin Oranges, drained.

Combine jello, pudding and water in a saucepan.  Bring to a boil.  Transfer to bowl, cover and refrigerate overnight.  The next day whip with beathers, add cool whip and whip in.  Stir in fruit.

This is also good with strawberry jello and strawberries or strawberry banana jello and strawberries and bananas.

Chocolate Eclair Cake

Package of Graham Crackers
2 small Pkg Instant French Vanilla Pudding
3 1/2 C Milk
8 oz Cool Whip
1 1/2 C  Powdered Sugar
3 Tblsp Milk
1 Tsp Vanilla
5 Tblsp Baking Cocoa
2 Tblsp Oil

Put 1 layer of graham crackers in 1 9 x 13 pan.  In a bowl, mix pudding, milk, and cool whip.  Spread 1/2 of mixture over crackers.  Put a layer of crackers over mixture.  Pour remaining pudding over crackers.  Put another layer of crackers on top.

Mix remaining ingredients.  Mix well and frost cake quickly.  Refrigerate overnight at least 8 hours.

Rhubarb Dessert

4 Cups Rhubarb - chopped in 1/2 inch pieces
2 Tblsp Flour
1 Cup Sugar
2 Tblsp melted butter

Combine above ingredients and spread in a 8x8 pan.

In small bowl combine the following until crumbly:
1 Cup Sugar
1 tsp baking powder
1 well beaten egg
1 Cup Flour
1/4 tsp salt
1 Cup Oatmeal
1/3 Cup Butter, melted

Sprinkle on top of rhubarb.  Bake at 375 for 30-35 minutes.  Serves 6-8.  Can easily be doubled and baked in a 9x13 pan.  Increase baking time to 35-40 minutes.

Serve warm with ice cream.

Zucchini Bread #2

3 Cups Flour                                                      
1 tsp salt                                                         
1 tsp baking soda                                               
1 1/2 Tbsp Cinnamon                                   
1/2 tsp Nutmeg                                           
2-3 ripe bananas, mashed                             
3 eggs        
1/2 C oil
1/2 C unsweetened applesauce   
1 C Sugar      
1 C Brown Sugar packed
2 tsp vanilla      
2 1/2 C grated zucchini
1 C walnuts, chopped  (optional)
1/2 C Coconut shredded

Combine flour, salt, baking soda, baking powder, cinnamon and nutmeg.  Set aside.   In another bowl combine bananas, eggs, oil, applesauce, sugars and vanilla.   Stir in flour mixture.   Stir in zucchini, nuts and coconut until evenly combined.   Pour into two 9x5 greased and floured loaf pans.  Bake at 325 for 40-50 minutes or until toothpick comes out clean.  Cool in the pans for 15-20 minutes before removing to wire rack

Chicken Parmesan Casserole

1 Tbsp Olive Oil
1 Clove Garlic - crushed
3-4 boneless skinless chicken breasts - cut into bite size pieces
2 C marinara sauce
1/4 C fresh basil
8 oz shredded mozzarella
4 oz grated parmesanh
1 - 5 oz pkg garlic croutons

Put olive oil in 9x13 pan.  Stir in garlic.  Place chicken chunks and marinara sauce in pan and stir.  Cover with fresh basil.  Top that with mozzarella and parmesan.  Cover with croutons.  Top with remaining cheeses.  Bake at 350 deg for one hour.

Cookie or Cheesecake?

2 - 18 ounce rolls of chocolate chip cookie dough
2 - 8 ounce cream cheese softened
1 cup sugar
1 egg
1 tablespoon vanilla

Preheat oven to 350. In 9x13 pan, spread 1 roll of cookie dough in bottom. In medium bowl, combine cream cheese, sugar, egg and vanilla. Mix until smooth. Pour over cookie dough. Slice remaining cookie dough into small pieces. Sprinkle over cream cheese mixture. Bake 35 minutes. Cool before cutting. Refrigerate.
