1 32 oz bag of frozen hash browns
1 lb bacon cooked and diced OR 1 lb ham cooked and diced OR 1 lb ground sausage cooked (we prefer the sausage, but all are really good)
1 med onion diced
1 green bell pepper diced
1 1/2 cups shredded cheese
1 dozen eggs
1 cup milk (can use soy for dairy allergies and it works great)
1 tsp salt
1 tsp pepper
Place frozen hash browns on the bottom of the crock pot, then add meat, then onion, green pepper and cheese. Beat eggs, milk, salt and pepper. Pour over the crock pot layers. Cover and turn on low. Cook for 10-12 hours. Will feed 8-10 hungry people (if that's your only dish) and 12+ as a side item.

Baked French Toast
1 (1lb) loaf french bread, cut diagonally in 1 inch slices (I don't use the ends)
8 eggs
3 cups half and half cream
2 tsp vanilla
1/4 tsp cinnamon
3/4 c butter
1 1/3 C Brown Sugar
3 Tbs light corn sypup
1. Butter a 9 x 13 baking dish. Arrange the slices of bread on the bottom. In a large bowl, combine eggs, cream, vanilla and cinnamon. Pour over bread slices, cover with foil and refrigerate overnight.
2. The next morning take the pan out of the fridge and flip each piece of bread over. This helps the top not be too crunchy and the bottom too soggy. Let it sit on the counter while you pre-heat the oven to 350. While the oven is preheating, in a small saucepan, combine butter, brown sugar and corn syrup. Heat until bubbling. Pour over bread and egg mixture.
3. Bake in oven, uncovered for 40 minutes. Put a cookie sheet or layer foil under the pan to catch bubble overs.
Makes 12 servings and re-heats really well.

Tortilla Roll-Ups
1 package of flour tortillas - medium size
1 package of flavored cream cheese spread - I like sundried tomato or garden vegie
sliced ham and/or turkey - or what ever kind of meat you like
sliced cheese that goes with the meat selected
fresh spinich
sliced green or red peppers
olives - optional
Spread a thin layer of cream cheese over the tortilla. Add a couple of slices of meat and one or two slices of cheese. Add spinich and green peppers. Roll up and slice.
