EASY CHEESE DANISH

2 cans of crescent rolls
1 8oz package of cream cheese at room temp.
1/2 cup white sugar
1 tsp lemon juice
3/4 tsp vanilla
1 tsp sour cream

Preheat the oven to 350. Place a sheet of parchment paper on cookie sheet or baking pan.

Open the crescent rolls carefully so as not to tear the dough. Do not unroll...you will need to leave it in it's cylindrical shape. Slice the dough into pieces about 1/4 inch thick (as though you're slicing cookie dough). Place the slices on a cookie sheet. Now press the center in to make an indentation for the cream cheese filling.

In a large mixing bowl, mix together the cream cheese, regular sugar, lemon juice, vanilla and sour cream. Add a dollop of the mixture to the indentation you made in each circle of dough. I find that about a tbsp works well, but you can use as little or as much as you like.

Bake for 15 - 20 minutes. While the danish are baking, you can make a quick royal icing to drizzle over the tops.

Drizzle for top:

1 cup confectioner's sugar
1 tbsp milk
1 tbsp softened butter

Mix together the confectioner's sugar, milk and butter in a small bowl. Use a spoon to drizzle it over the tops of the danish, or you can put it into a small zip-top bag and snip of the corner for an easy "piping bag."

Take the danish out of the oven and allow them to cool for 10-15 minutes before icing.

Lara's Crockput Breakfast Casserole

1 32 oz bag of frozen hash browns
1 lb bacon cooked and diced OR 1 lb ham cooked and diced OR 1 lb ground sausage cooked (we prefer the sausage, but all are really good)
1 med onion diced
1 green bell pepper diced
1 1/2 cups shredded cheese
1 dozen eggs
1 cup milk (can use soy for dairy allergies and it works great)
1 tsp salt
1 tsp pepper

Place frozen hash browns on the bottom of the crock pot, then add meat, then onion, green pepper and cheese. Beat eggs, milk, salt and pepper. Pour over the crock pot layers. Cover and turn on low. Cook for 10-12 hours. Will feed 8-10 hungry people (if that's your only dish) and 12+ as a side item.

Baked French Toast

1 (1lb) loaf french bread, cut diagonally in 1 inch slices (I don't use the ends)
8 eggs
3 cups half and half cream
2 tsp vanilla
1/4 tsp cinnamon
3/4 c butter
1 1/3 C Brown Sugar
3 Tbs light corn sypup

1. Butter a 9 x 13 baking dish. Arrange the slices of bread on the bottom. In a large bowl, combine eggs, cream, vanilla and cinnamon. Pour over bread slices, cover with foil and refrigerate overnight.
2. The next morning take the pan out of the fridge and flip each piece of bread over. This helps the top not be too crunchy and the bottom too soggy. Let it sit on the counter while you pre-heat the oven to 350. While the oven is preheating, in a small saucepan, combine butter, brown sugar and corn syrup. Heat until bubbling. Pour over bread and egg mixture.
3. Bake in oven, uncovered for 40 minutes. Put a cookie sheet or layer foil under the pan to catch bubble overs.

Makes 12 servings and re-heats really well.

Best Pancakes!

1 1/4 cup flour
1/4 cup granulated sugar
1 heaping teaspoon baking powder
1 tsp baking soda
pinch of salt
1 egg
1 1/4 cup buttermilk (or substitute, see below)
1/4 cup oil

Mix it all up and pour onto a preheated skillet in desired pancake sizes and shapes. My kids prefer Mickey Mouse shaped ones. I like em big and fluffy. We have these at least once a week for dinner. So easy and yummy. I freeze the leftovers if/when we have any for breakfasts for the coming week. I like mine with peanut butter and syrup and with summer coming I have more fruit in the house so I'll start doing that instead. My kids like them with syrup and sometimes jam or peanut butter. So yum!

**Buttermilk substitution. I never have buttermilk so I use the one TBS of vinegar for one cup of regular milk. I mix that together at the beginning and let it sit until I have everything else mixed together then add it. Comes out perfect every time. To make dairy free make the buttermilk with Soy milk.

Banana Muffins

I got this recipe from a girl on a message board I frequent and I finally had ripe enough bananas Tuesday night to make them.

1 1/4 cup flour
1 cup old-fashioned rolled oats
1/2 cup sugar
2 tsp baking powder
1/2 teaspoon salt
1 tsp cinnamon
1 cup mashed ripe bananas (about 2 bananas)
1 egg (or flaxseed mixture, see below)
1/3 cup canola oil (or no sugar added applesauce)
1/3 cup milk (soymilk)
1/2 chopped walnuts (I leave these out)
1/2 cup chocolate chips

Preheat oven to 375 and grease muffin pan or line with paper cups.
Combine first 7 ingredients (dry) in medium bowl. Mix the banana, egg, oil, and milk in a separate bowl. Make a well in the middle of dry ingredients and stir in wet ones. Mix until just combined. Fold in nuts and chocolate chips and divide among muffin cups. Bake 18-20 minutes until golden brown and smell heavenly.

Flaxseed mixture: Mix 1 TBS of ground flaxseed with 3 TBS of water and you have the perfect healthy egg alternative for any recipe.

Verdict: These were a perfect breakfast for me. My kids are not muffin fans (of any kind) so they have tasted them but have not eaten a whole one. They are really yummy and I plan on alternating between these and banana bread when I have bananas to use.

French Toast Sandwiches

French Toast Sandwiches

Frozen French Toast Slices
Honey Ham Lunch Meat
Sliced American Cheese
Strawberry Jam

Toast French Toast Slices as directed on the box in the toaster and place desired amount of ham and a slice of cheese. Dip in Strawberry Jam. Serve Warm.

Verdict: I LOVE these. Like really, really love them. One of my favorite foods is Monte Crisco Sandwiches but they are not easy to find on menu's. This tasted like a really easy one of those. My kids gobbled them up. Even Turbo who does not like jam. I convinced him to try one bite dipped in jam and he could not get enough. I will be putting these on the menu for a quick filling breakfast or our sunday lunch before our 1 pm church. It was a fun breakfast for dinner type thing. The kids thought I was so cool making sandwiches with their frozen french toast.
